The Chablis Premier Cru Vaillons by J. Moreau & Fils is the label created to enhance the characteristics of this precious cru, which is located on the left bank of the Serein river, right in front of the prestigious area occupied by the Grand Cru of the Appellation. It comes from vineyards that always guarantee an excellent level of ripening of the grapes, capable of giving rich and intense aromas. The charm of the wine lies precisely in the perfect balance between the clear mineral freshness, typical of northern Chardonnay and the notes of a ripe and expressive fruit. Smooth, intense and deep, thanks to a long aging in steel, it enhances the varietal typicity of the great Chardonnay from northern Burgundy.
The Premier Cru Vaillons Chablis is the result of over a century of experience and profound knowledge of the area. An extraordinary raw material and great care in the vineyard allow us to obtain an excellent level of Chardonnay. The grapes come from a 4-hectare parcel located within the Premier Cru Vaillons, facing south-west. It's about a old vineyard planted in 1945 on very suitable soils, made up of calcareous marl, which produces a few perfectly ripe bunches and with very intense and concentrated aromas. Fermentation takes place in stainless steel tanks at a controlled temperature of 18 °C, with indigenous yeasts and lasts about 15-18 days. After the malolactic fermentation and a light filtration, the wine ages on the fine lees for at least one year before being bottled.
The Premier Cru Vaillons by J. Moreau & Fils is a Chablis with an intense face and generous fruit, which well represents the character of this famous area of the Appellation. At sight it has a light yellow color with brilliant golden reflections. The olfactory framework is rich and intense, with fragrant aromas of white pulp fruit, floral nuances, balsamic hints, iodized and mineral sensations . On the palate it is full-bodied, elegant and flowing, with a satisfying and rich fruit, which leads harmoniously towards a sapid and very fresh finish. A great white, perfect for a seafood dinner. Also try it with a platter of fresh cheeses.
