From the vinification of Schiava grapes in purity 100% pure. The area around Lake Caldaro has for centuries been the most important and well-known cultivation area for Schiava (German “Vernatsch”). For this reason the resulting wines bear the name of Lago di Caldaro. To guarantee the best quality, at the beginning of the harvest only the ripest bunches are harvested which are then vinified separately and can thus boast the denomination of Lago di Caldaro chosen. One of the most renowned locations in the cellar is the Sattel, a vineyard located on the rolling hills along the Wine Road. It produces a harmonic, soft and silky Schiava which ensures a frank and fruity drink. The vineyards They are located in the "Sattel" area on the hills between Appiano and Lake Caldaro along the Strada del Vino, the vineyards are located at 420 to 480 meters above sea level. The South/East, South/West exposure, the land is characterized by morainic deposits and the training system is the classic Trentina Pergola. The harvest takes place from the beginning to mid-October, the collection and selection are carried out manually. The vinification involves fermentation in steel. Following the malolactic fermentation and aging partly in large wooden vats, partly in steel containers.
