The Zero Dosage Franciacorta "Pinònero Natura" by Contadi Castaldi is an intense and elegant Millesimato. A careful selection of the best grapes of the Franciacorta area allows for the creation of a particularly charming Blanc de Noir. The typical structure of Pinot Noir and its aromatic richness are enhanced by a partial vinification in wood. The long period of aging on the lees allows the wine to acquire a remarkable aromatic complexity and a great expressive depth, with aromas ranging from citrus scents to small red berried fruits, always well supported by a lively freshness.
The "Pinònero Natura" is a Franciacorta Dosaggio Zero Millesimato made by one of the best known names of this Lombard sparkling wine denomination. Contadi Castaldi is a recent reality, founded in 1991 by Vittorio Moretti, former owner of the famous Bellavista brand. Thanks to consolidated experience, Contadi Castaldi quickly established itself with quality Franciacorta versions, often characterized by a innovative and modern taste . Currently the estate covers an area of about eighteen hectares, divided into parcels that are located in various areas of Franciacorta. Although the tradition of Franciacorta is essentially based on a Classic Method based mainly on Chardonnay, there are some areas in which Pinot Noir expresses itself at excellent levels. The grapes used come from fine vines over 25 years old, which are cultivated partly with Guyot and partly with the ancient Casarsa method.
The Zero Dosage "Pinònero Natura" by Contadi Castaldi is an atypical Franciacorta, compared to a territory where Chardonnay is mainly grown. At the end of the harvest, the grapes are gently pressed and the must is vinified in white, with a fermentation of about three weeks in stainless steel containers. The base wines are aged for a period of 7 months, partly in steel and partly in wood. After the creation of the final assembly, the second fermentation takes place in the bottle according to the Classic Method, with a stop on the lees for at least 60 months. In the glass it has a straw yellow color with light golden reflections. The perlage is fine and persistent. The aromatic profile expresses aromas of citrus fruits, pink grapefruit, nuances of white flowers and notes of small red berried fruits. On the palate it is intense, deep and austere, with a harmonious center of the mouth and a pleasant finish dry, fresh and savory .
