The Barolo Sottocastello di Novello is the latest born in the Cà Viola company and represents, for its producers, the culmination of a journey that became reality after the acquisition of a plot at the foot of the neo-Gothic castle of Novello. A vineyard that combines the power of Nebbiolo di Monforte and the elegance of those produced in Barolo. Aged in large barrels for 24 months and 12 months in non-vitrified cement tanks, it is a high-quality, energetic, austere and bewitching Barolo, capable of giving a rare pleasure to the taste.

Tasting Notes:
Full of balsamic and spicy notes, hints of undergrowth and ethereal menthol, tobacco, and cocoa. Elegant and complex, silky, with a rich and dense structure, with a harmonious and long-lasting finish. On the palate, it is of great structure, with a dense and persistent tannic texture, notes of chocolate and tobacco on the finish.


Pairings:
Pairs well with soups and stews, red and white meat dishes, game, and aged cheeses.


 Producer
The story of the Ca' Viola agricultural company begins in Montelupo Albese, in the Langhe, the Langhe of the 1980s: hills not yet famous on which a new wind blows. Here Beppe Caviola rents the vineyard of dreams, called Barturot, and together with his loyal Maurizio, they vinify the grapes in the garage of their parents' house; it will then be Elio Altare to taste that wine and encourage Beppe to bottle it: thus, in 1991, the first label signed Ca' Viola is released.
