Cabernet Maculan comes from those vineyards located on the hills of Breganze. Here the vines are carefully cultivated by the cellar team, growing in a terroir which is characterized by the presence of a volcanic subsoil where tuff abounds. The bunches are selected during the manual harvest, and after destemming the grapes go to the pressing phase. The must obtained from this operation ferments in stainless steel tanks, with continuous pumping over. The refinement phase takes place first for 12 months in steel tanks and then, once the bottling operations have been completed – which do not involve any filtration – for a further 6 months in glass.
The Cabernet red wine made by the Maculan winery presents itself to the eye with a cheerful ruby color, crossed by a few light flashes tending towards purple, visible in the nail. The range of notes that envelops the nose moves on fruity notes and typically varietal references – where is the green pepper to play the part of the protagonist –, alternating with light hazelnut nuances. On the palate it is medium-bodied, with a really pleasant refreshing sip, in which the tannic texture is worked with grace, integrating perfectly into the general structure of the wine. Delicate and bewitching, it is perfect on the table in combination with land menus.
